Recipe Name : Vegetables curry with ginger

Ingredients : 1 cauliflower chopped into rosettes
2 big onion chopped into cubes
3 peeled potatoes chopped into cubes
1 glass green peas
1 glass chicken or vegetables stock
4 tablespoons olive oil or fat
2 tablespoons finely grated ginger
5 minced garlic cloves
1 minced green chili
2 teaspoons turmeric
1 teaspoon garam masala
2 teaspoons coriander
1 teaspoon salt
1/2 teaspoon white pepper
1 teaspoon fenugreek
1 teaspoon cinnamon seeds
1/2 lemon juice
1/3 glass minced fresh coriander
Directions : • Heat the oil or fat then add cinnamon seeds and onion until it browns.
• Add garlic, chili, and ginger and toss for 2 minutes.
• Add other spices and salt and keep tossing.
• Add potatoes and mix with spices and fat.
• Turn the heat to medium and stir for 3-5 minutes.
• Add stock and cover the bowl then leave over moderate heat for 10 more minutes.
• Turn off the heat and add half the quantity of fresh coriander.
• Toss well and leave the mixture for 10 minutes.
• Serve with rice and garnish with the rest of coriander.
