Recipe Name : Roasted mutton with red French sauce

Ingredients : 1.5 kg of boneless mutton shoulder
1 teaspoon salt
1/2 teaspoon ground black pepper
2 mashed garlic cloves
1 teaspoon dry oregano
1 glass or 250 ml sugarless red grape juice
1 teaspoon grated orange peel
1 teaspoon dried rosemary
1 teaspoon vegetable oil
3 glasses or 750 ml water
2 sheep mutton stock Magi cubes
1 tablespoon tomato paste
1 teaspoon ground sweet red pepper
2 tablespoons cornstarch dissolved in 2 tablespoons water
Directions : • Place the meat in a bowl with salt, pepper, garlic, oregano, grape juice, grated orange peel, and rosemary then cover and keep in the fridge overnight or for hours.
• Remove the meat from the marinade and dry using absorptive paper.
• Lay the meat in a tray and paint with oil then roast in a preheated oven to 200 Celsius for 30 minutes or until well-browned.
• Add water and the marinade to the meet then cover with a tan folio and return to the oven. Leave for 2 1/4 hours or until the meat becomes ripens.
• Remove the meat from the tray and drain the broth in a bowl with removal of the surface fat using a spoon.
• Bring the bowl over heat and add tomato paste and sweet red pepper powder with 2 cubes of Magi stock.
• Stir the mixture then add cornstarch with water with continuous stirring until the mixture boils and becomes thick.
• Cut the meat into steaks and pour the sauce on top.
